Mango Yogurt Chia Parfait Glasses

Tall glasses start with a base of vanilla chia pudding, then get a creamy yogurt layer and a generous heap of diced ripe mango. For a pretty variation, swap one glass to a crushed raspberry layer. Sunny, tangy and filling, these make a fresh dessert for warm days or a sweet start to a lazy morning.

Method 6 steps

  1. Whisk the chia seeds, milk, 2 tbsp honey and vanilla, rest 10 minutes, whisk again and chill for at least 4 hours until thick.

  2. Sweeten the yogurt with the remaining 1 tbsp honey.

  3. Divide the chia pudding among four glasses, filling each about halfway.

  4. Spoon yogurt over three of the glasses and top with a small layer of mango pieces pressed against the glass, then more yogurt.

  5. Top the yogurt glasses with a tall heap of diced mango. For the fourth glass, layer crushed raspberries over the chia and sprinkle with granola.

  6. Serve cold within a few hours.
