Hand-Cut Fries Showered with Parmesan

Hand-cut potatoes are blanched in simmering vinegared water, twice fried to a golden crunch and then buried under a snowfall of finely grated parmesan that softens slightly on the hot surface. Nutty, salty and addictive, they are made for sharing with a cold beer.
