Grilled Garlic Herb Wings with Ranch Dip
No breading and no sticky sauce, just wings rubbed with garlic, herbs and lemon zest, then grilled until the skin blisters and tightens. A cool, herby buttermilk ranch is the only partner they need. They are lighter than fried wings but every bit as addictive on game day.

Method 6 steps

Pat the wings dry and toss with baking powder, 1 1/2 tsp salt and pepper. Refrigerate uncovered 1 hour.

Whisk buttermilk, mayonnaise, herbs, a pinch of garlic, salt and pepper for the ranch. Chill until serving.

Mix the olive oil, remaining garlic, oregano and lemon zest and toss with the wings.

Set up a grill for medium indirect heat, about 375 F. Cook the wings on the cool side, covered, for 20 minutes, turning once.

Move them over direct heat for 6 to 8 minutes, turning often, until the skin is blistered with dark spots.

Pile onto a plate and serve with the ranch.
