Grilled Garlic Herb Wings with Ranch Dip

No breading and no sticky sauce, just wings rubbed with garlic, herbs and lemon zest, then grilled until the skin blisters and tightens. A cool, herby buttermilk ranch is the only partner they need. They are lighter than fried wings but every bit as addictive on game day.

Method 6 steps

  1. Pat the wings dry and toss with baking powder, 1 1/2 tsp salt and pepper. Refrigerate uncovered 1 hour.

  2. Whisk buttermilk, mayonnaise, herbs, a pinch of garlic, salt and pepper for the ranch. Chill until serving.

  3. Mix the olive oil, remaining garlic, oregano and lemon zest and toss with the wings.

  4. Set up a grill for medium indirect heat, about 375 F. Cook the wings on the cool side, covered, for 20 minutes, turning once.

  5. Move them over direct heat for 6 to 8 minutes, turning often, until the skin is blistered with dark spots.

  6. Pile onto a plate and serve with the ranch.
