Beef Shawarma Wrap with Fries and Garlic Sauce

Spiced beef strips seared until crisp, red onion and greens roll up inside a thin flatbread for a wrap long enough to share. Crunchy fries, a tangy tomato dip, creamy garlic toum and a lemon on the side turn it into the kind of platter you would order from a late-night kebab shop.

Method 6 steps

  1. Toss the beef with the shawarma spice, 1 tbsp olive oil, the lemon juice and salt. Marinate for 20 minutes.

  2. Toss the fries with 1 tbsp oil and salt, spread on a sheet pan and roast at 450 F for 25 to 30 minutes, flipping once, until deep golden and crisp.

  3. Stir the yogurt with grated garlic and a pinch of salt to make the garlic sauce.

  4. Heat the remaining oil in a cast iron pan over high heat and sear the beef for 3 to 4 minutes, leaving it undisturbed at first so the edges crisp.

  5. Warm the lavash for a few seconds in the hot pan. Spread with garlic sauce, add greens, red onion and beef, then roll tightly and cut in half on the diagonal.

  6. Serve on a board with the fries, tomato dipping sauce, extra garlic sauce and the lemon half.
