Apple Pie Squares with Vanilla Ice Cream
Baked in a sheet pan, this slab pie delivers a higher ratio of flaky, golden crust to spiced apple filling in every square. The apples cook down into soft chunks in a glossy cinnamon syrup that pools onto the plate. A scoop of vanilla ice cream melting over the top is non-negotiable.

Method 6 steps

Cut the butter into the flour and salt until pea-sized, then add ice water gradually until the dough holds. Divide in two, flatten into rectangles and chill 1 hour.

Toss the apples with both sugars, cornstarch, cinnamon and lemon juice and let stand 15 minutes.

Heat the oven to 400 F. Roll one dough piece to a 15 by 11-inch rectangle and fit it into a 10 by 15-inch rimmed pan.

Spread the apples and their juices over the crust, roll out the second piece and lay it on top, crimping the edges and cutting several vents.

Brush with the egg wash and bake 45 to 50 minutes until deep golden and the filling bubbles thickly through the vents.

Cool at least 1 hour so the syrup thickens, then cut into squares and top each with a scoop of vanilla ice cream.
