Hand-Pleated Pork and Shrimp Boiled Dumplings

Silky homemade wrappers are pleated around a juicy pork and shrimp filling, then boiled until they turn glossy and nearly translucent. A shower of fresh scallion rings adds snap and color. Folding them is a relaxing weekend project, and a batch freezes well for quick dinners later.

Method 6 steps

  1. Stir the warm water into the flour, knead for 8 minutes until smooth and elastic, then cover and rest for 30 minutes.

  2. Mix the pork, shrimp, minced scallions, ginger, soy sauce, sesame oil, wine, white pepper and salt in one direction for 2 minutes until sticky.

  3. Roll the dough into a log, cut into 28 pieces and roll each into a 3 1/2 inch round that is thinner at the edges.

  4. Place a heaping teaspoon of filling in the center, fold in half and make 5 or 6 pleats along one side, pressing firmly to seal.

  5. Boil the dumplings in a large pot of water in batches. When they float, add 1/2 cup cold water, return to a boil and cook 2 more minutes until the wrappers look glossy and the filling is firm.

  6. Lift out with a slotted spoon, arrange on a plate and scatter the sliced scallions over the top.
