The dough is made from durum wheat semolina and dried slowly at low temperatures to keep its golden color and nutty flavor. Folded into loose nests, the ribbons stay intact in the package and untangle easily in boiling water. Cook in well-salted water for six to eight minutes, reserving a cup of pasta water for your sauce. Store in a cool, dry pantry.
